common recipe questions

Can I use all-purpose or whole wheat flour?

Bread flour will give you the best results in this recipe. You can substitute all-purpose for the bread flour but the texture will change. You can substitute up to half of the bread flour with whole wheat (again, the texture will change). We do not recommend using all whole wheat in this recipe.

The recipe calls for 1 1/2 eggs. How do I measure that? Can't I just use 1 or 2 eggs instead?

The easiest way to measure is to beat the eggs and remove about 1 1/2 tablespoons of egg (one large egg is approximately 3.25 tablespoons). It is an odd measurement, but it makes a difference in the recipe if it is measured correctly vs using more or less egg.

The measurement of the egg is indeed a bit weird but it's 100% right because the recipe turns out amazing!! This is the best white bread recipe I've made. Not sure how the other reviewer thought this was like a quick bread. It's not. It's not wonder bread either but if that's what you are looking for you shouldn't be baking. This is a "real" bread!!!

I don't understand all the good reviews. I made this twice in a row yesterday; first time was a total fail following the directions exactly (sides and top rose like a thin shell but inside there was a huge gap, it only rose halfway), second time after alterations (cold milk, cold butter, 1/4 t less yeast, 1 t salt) it worked but it's weird. Both breads are like cake, or like quick bread texture, just really weird and not bread-like at all. It tastes dull. The egg and a half measurement is wasteful, difficult, and surely the reason this is like quick bread and not white bread. I am just not seeing it here. I won't be making this again unfortunately and am upset for having wasted so many ingredients.

This is the best bread I’ve made in my new machine. Tastes like Challah and my husband loved it. The only problem I had was the size of the loaf, as it was too big for the pan. Is there an adjustment in the recipe or loaf size to help with this?

I registered just so I could post a review! I made a lot of bread, and this is by far our go to recipe. It's perfect. I'm a pizza maker, so I always have a lot of great OO flour on hand, which has just slightly more protein content than bread flour and it is PERFECT. Thank you! At first when I saw the mass of wet dough in the bread machine I thought - oh man, this isn't going to be good - then it ended up being the best bread that machine has ever baked!

I used the 1 lb recipe in my 2 lb Cuisinart bread making machine and it came up high. The bread is light and fluffy, but a maybe a little too light in my opinion. I prefer a denser bread that can withstand being sliced and spread on. Taste was just okay. It isn't bad, but it just doesn't do much for the palate. It's like eating air.

I love this recipe, its the only one I use. I make the dough in the machine, then punch down let it rest for 10 min. Then I shape half into rolls and then a loaf or I make 4 small loafs in mini pans and give to my friends. They all love it. I dont use store bought bread anymore. Thank you!

Delicious!! I wish I would have set it at 1 lb not 1.5, but now I know. The top exploded over a bunch and I had to cut it off. Really good taste. This will be my new go to recipe.

May have been my fault, as I put the warm milk, yeast and sugar in to the bread machine and let activate for 10 mins first. My dough proofed and spilled down the edges of the container in to the cooking vessel. It was a huge mess. Made a 1.5lb loaf in a 2lb machine. Not sure what happened.

Bread came out beautifully! The 1 1/2 lb recipe was perfectly sized for my 2lb machine. Couldn’t resist a small taste test and it’s perfect warm with some butter. Can’t wait to try with sandwiches tomorrow.

Easy to make. I followed the recipe but added approx. a tablespoon of honey. I was going to do a 2 lb loaf but at the last minute I changed my mind, which thank goodness-the 1 1/2 loaf was almost too big for the machine! Definitely a keeper! As a tip-if you have a machine that can do a 2 lb, try the 1 1/2 lb first, just to make sure.

I followed the recipe, except for half a cup of whole wheat flour ... the dough was very wet, I added another half cup of whole wheat flour and it was wonderful ... my husband said it is the best and softest bread I've ever made! 😍🥰🤩

Used my machine to make the dough, punched it down and let it sit for 20 mins then formed half of it into a round pan of dinner rolls and the other half for toutons (pan fried). Excellent recipe! Also I used all purpose flour because that’s what I had on hand.

I made this today and it is soft and delicious. I made the dough in the bread machine and then made into a loaf and let rise for 30 min and baked at 375 for 25 min. Very good, will be making again. Thanks for the recipe.

I've made this recipe twice, the first time I made it just as it is. The second time I replaced a cup of white flour with one cup of multigrain flour. The bread turned out perfectly both times. Much better than the recipe that came with my bread machine!

can i use regular all purpose flour instead of bread flour for this recipe

    • CDKitchen Staff Reply:

Yes, the texture will be a little different but it should work fine. Bread flour has a little more rise to it.

Oh! My! Oh! My! This is a great tasting bread. I'm new at making bread and using a bread machine. I used the machine to kneed the dough and for the 1st & 2nd rise. took it out when time and put it into baking pan. let it sit for 15 min then baked it in the oven. Beautiful.

This is my go-to bread recipe. I cut the salt down to 1/4 teaspoon and reduced the yeast to 2 teaspoons. I use my bread machine’s dough cycle and remove it when it’s about double in size, put into a pan and let it rest about 20 minutes and then bake it at 375. It comes out perfect every time. It has a fine, moist texture and perfect consistency.

Made this bread for my first time ever making bread! Turned out so perfect just needs a little adjustment! I think for a 2 lb loaf I will use less yeast next time as it rose so high the top did not crisp up and had to be cut off. Overall though I wont be using any other recipe but this one! YUM

HELP, I made this recipe 2X and both times it looked as if it exploded in my bread machine. I followed recipe to the letter with fresh bread flour and yeast. Would like to get some help because this is the only recipe to do this. Thank You & HELP!

Help! I made this bread recipee in my machine and used fresh yeast, bread flour ect. The dough rose too high and then fell. I am getting conflicting responses to correct the problem. Some say too much liquid and others too much yeast. I want to try this recipee again as it does have wonderful flaver. I just have a funny looking loaf.

I tried this recipe and it turned out great! I did have to add a little more flour than the recipe called for, but that's only natural as so many things can affect a bread recipe. This is a very tasty basic white bread recipe. Simple ingredients that turn out delicious!

I had NO problem with this recipie. of course I am using a ZOJIRUSHI BBCC X-20 which has a cook time of 3.5 hrs. I did just as listed and got a 2lb loaf with NO problem! Great texture to the bread also.

  34. Jenny REVIEW:
    January 26, 2008

You have to help stir the flour down into the wet at the start because there is so much liquid at the bottom of the machine, but once you do that the bread turns out light, fluffy and delicious. Fantastic!

  35. Chrisie December 2, 2007

Eurk! I ended up with a big mass of cooked dough at the bottom of my pan. Please be careful when posting recipes, ensure you type the proper measurements!!

    • CDKitchen Staff Reply:

Bread machine recipes that work for one machine/person may not always work perfectly for someone else in another location. Things like altitude, humidity, hardness of flour (yes, that varies by location!) can all affect the outcome. We always watch our bread carefully when trying a new recipe and adjust ingredients as needed.

FAQs

How to make homemade white bread more flavorful? ›

If you're looking to ramp up the taste of your favorite bread recipe, we recommend adding a bit of fat. A fat like butter, olive oil or coconut oil in small quantities will help your bread achieve a higher rise and it will also boost its flavor by tenfold.

How do I make my bread machine bread better? ›

Some recipes will advise adding sugar, which, in addition to making the bread a little sweet, helps the yeast to rise better. Others also suggest adding a little oil, such as olive or vegetable oil. This helps the dough form, preventing it from sticking to the sides of the pan, and makes the bread more tender.

What is the secret to a soft and fluffy bread? ›

What is the best flour to use in a bread machine? ›

Just be sure to use a flour with a high protein content. King Arthur Unbleached All-Purpose Flour, with its high gluten, is an excellent flour for bread machines. What ingredients add flavor to bread? ›

Why does my homemade bread have no flavor? ›

Salt adds flavor to bread. If none or too little is used in a recipe, the bread will lack the right flavor and taste "bland." If you reduce the amount of salt, try adding some dried herbs to increase the flavor. Too much yeast in bread will give bread an off-taste.

What is one drawback of using a bread machine? ›

One disadvantage of using a bread maker as opposed to your hands is that the paddles are typically fixed, meaning they remain in the dough when baking, often leaving a hole in the middle of the loaf. Whilst this is not the biggest hinderance, it can be an annoyance to those who aim for gold standard loaves.

Is it cheaper to buy bread or make it in a bread machine? ›

Making bread from a machine is marginally cheaper than buying it, as long as you eat bread frequently enough to offset the cost of the appliance. Specifically, I see this as an investment that's smart for households that go through bread quickly, like large families or homes with multiple roommates.

Is it better to use bread flour in a bread machine? ›

So yes, you should use bread flour in the recipe. It has higher protein than all-purpose flour and will help your bread rise better and hold its shape.

How do I make my breadmaker bread less dense? ›

Too much heat or humidity might lead to a too-quick rise and a crevice near the center of your bread. Conditions that are too cold might delay proofing or rising, resulting in a super-dense loaf.

What flour do professional bakers use for bread? ›
