The incredible, mouth-watering, most-perfect-smoked-sausage-you-have-ever-tasted that we call Conecuh Sausage was birthed in Evergreen, Alabama. At the risk of making supplies become even more diminished, I am sharing 45 Conecuh sausage recipes to expand your culinary world…and maybe impress your inlaws like I did! Read on for the full story and recipes sorted by meals.

Conecuh Sausage: Alabama’s Best Kept Secret

My in-laws were visiting from Nebraska last summer. “How about sausage for dinner?” I asked. In my world, the “Conecuh” designation was understood. The expression on their faces told me that did not sound very enticing. My husband piped up, “Oooh yes! Conecuh sausage!” His parents had never heard of this amazing Alabama-born delectable. He told them to trust us and now…well we have it every time they visit. They also carry it back to Nebraska in their cooler since they can’t find it in stores there!

It was at that moment that I realized that this amazing combination of meat and seasoning packaged in a natural casing was not a staple in every household. I had taken this blessing for granted being born and raised in Alabama. The secret has gotten out over time and the love of Conecuh sausage has spread.

I found a group on Facebook called “The Conecuh Sausage Fan Club” and quickly joined 23,000 other fans to learn all things Conecuh sausage. You can join the public group too. The only rule is: “All things Conecuh and nothing else!” It is a pure place void of politics, COVID-19 talk, and any other negativity in the Facebook world today…only Conecuh sausage talk…and it is glorious!

Conecuh Sausage Recipes and Inspiration

Breakfast

1. After cooking Conecuh sausage in your skillet, cook your eggs in the grease and bring the flavor to another level.

2. Conecuh Sausage Balls– Recipe courtesy of Jennifer Pinion

  • 1 lb Conecuh Sausage (chop in food processor)
  • 2 cups of Bisquick
  • 1 package of cream cheese
  • 1 cup of sharp cheddar cheese
  • 1 cup of mild cheddar cheese
  • Mix, roll into balls, and bake at 400 for 15-20 minutes.

3. Biscuits with Conecuh Sausage browned in a skillet with your favorite jam. (Peach jam is a favorite of many!)

4. Conecuh Breakfast Bacon/Sausage Hash with sausage gravy and extra Cracked Black Pepper Conecuh Sausage. Here is a basic breakfast hash recipe.

5. Conecuh, Egg, and Cheese Breakfast Sandwich. Toast the bread. Slice the sausage lengthwise in strips rather than in coin-sized circles.

6. Conecuh Hashbrown Casserole. Add thinly diced Conecuh sausage to your hashbrown casserole. This recipe is on their website so it must be a favorite!

Full recipe courtesy of Stoney DeLoach: “Just last night I cut smoked Conecuh into half-inch pieces, sautéed until lightly browned, added a large chopped onion, cooked an additional 5 minutes with sausage, then 1-2 ripe tomatoes chopped, plus one can diced tomatoes. I cooked another 5 minutes until bubbling. Then added chopped okra (fresh if possible) along with some creole seasoning. Simmered covered for 30 minutes to an hour. Add some vegetable stock or chicken stock if too thick. Adjust any ingredients to your personal liking. Could also be served over a bed of rice!”

13. Shrimp and Grits with Conecuh Sausage. A Southerner’s dream come true!

18. Sweet and Sour Conecuh Sausage. This Asian twist to our beloved sausage was discovered on their website. If you are a fan of sweet and sour chicken, this might become your new favorite!

19. Shrimp, Crab, or Crawdad Boils are always better with Conecuh sausage. Substitute whatever sausage you usually use or just add Conecuh to the mix!

20. Conecuh Sausage with Cabbage sauteed in a skillet. Fans report using the Cracked Peppercorn Sausage and adding onions takes this recipe to another level!

21. Conecuh Pineapple Skewers. Add a little brown sugar on top and roast it in the oven. This inspiration came from a fellow fan and it is very similar to the Conecuh Sausage and Pineapple Skewers with Cheddar from the official Conecuh website.

Conecuh Sausage Browned Like Ground Beef

Before you cook your sausage, remove the all-natural casing and strip the inside out. Finely dice or put in a food processor then brown it in a skillet like you would ground beef. Rumors have it that fans have asked and asked about Conecuh ground sausage, so maybe that will be added in the future!

23. Add browned Conecuh sausage to your queso dip, street tacos, pasta sauce, or any recipe that calls for ground beef!

24. Conecuh Sausage Cornbread. This comes from the Conecuh Sausage Recipes section on Conecuh’s site. I would like to try it chopped as instructed, but also with the browned ground sausage!

Snacks and Appetizers

25. Sausage, Pimento Cheese, and Wickles Pickles with Crackers. Pan fry your sausage and serve it with pimento cheese, crackers, and Wickles Pickles. (Wickles Pickles is another Alabama-born company and favorite!) Serve with Saltines or another favorite cracker.

26. Conecuh Sausage Cheese Wontons. Maggie Martin uses Boursin cheese, wonton wrappers, and chopped grilled Conecuh sausage topped with pepper jelly and baked. It’s a favorite with family and friends. These look so good and a little fancy to be honest!

27. Bacon Wrapped Conecuh Sausage Bites. Cut your sausage into bite-sized pieces, wrap in bacon, secure a toothpick in each one, line on a cookie sheet, and place in a 400-degree oven until bacon is crispy. Bacon paired with Conecuh sounds like a match made in heaven!

28. Bacon Wrapped Conecuh in Your Slow Cooker. Tori Ladnier from the Fan Club shares: “Cut sausage into approx. 1-inch pieces, cut strips of bacon into thirds, wrap a section of bacon around each piece of Conecuh and secure with toothpick, put them in a slow cooker, then crumble up one box of dark brown sugar on top. Cook for about 3 hours, or until the brown sugar has completely melted.”

29. Crockpot Conecuh co*cktail Sausage. Cut into bite-sized pieces, mix with BBQ sauce, grape jelly, and cook on high in a crockpot for about 4 hours. Sweet Baby Ray’s BBQ sauce is a favorite, or support another Alabama business like Dreamland BBQ and use their delicious sauce!

30. Conecuh Sausage Pigs in a Blanket. This is a winner on game days for sure!

31. Caramelized Conecuh Sausage Bites. Mix brown sugar and maple syrup (or whatever dark syrup you have on hand) with a little water to make a sauce. Put that and the sausages in a plastic bag to cover the sausages well. Then sautée them in a pan on the stove until the syrup is caramelized around them.

32. BBQ Conecuh Medley. Chop sausage into chunks and cook in a skillet with onions. Toward the end, add BBQ sauce and cheese. Mix together and melt, then serve on toast or enjoy this medley alone.

Outside on the Grill

33. Grilled Conecuh Sausage Dogs. Slice smoked sausages lengthwise and use in place of regular hot dogs, or look for the Conecuh Sausage Dogs they sell!

34. Smoked Sausage Cheese Dip On the Grill. Place all your favorite cheese dip ingredients along with Conecuh sausage in a skillet and cook it on the grill with your other dishes.

35. When smoking Boston Butt, place Conecuh on top of it for the last hour. This lets the wonderful juices drop onto your pork!

(Bonus tip: We have been cooking our Conecuh in our Air Fryer and my husband says it is his favorite! Easy cleanup and great when the weather is too bad for outside grilling.)

  • 1lb Smoked Sausage
  • 1 Tbsp oil
  • 1 medium onion, sliced
  • 1lb niblet potatoes or red potatoes cut into chunks
  • 1 small to medium green cabbage, roughly chopped
  • 1 28oz can crushed tomatoes
  • 2 ears fresh corn cut into 3 pieces each or 6 pieces small frozen
  • 1 32oz box Chicken Broth or Stock
  • 1 Tbsp Italian Seasoning
  • 1 Tbsp fresh or dried parsley
  • 1 tsp garlic powder salt and pepper to taste.

“Cut sausage into 1/2” rings. Brown in oil. Add onion and cook until tender. Add cabbage, stir together. Salt and pepper each layer for flavor. Add potatoes and seasonings. Stir together. Add tomatoes. Rinse can with about 1 or 2 Tbsp water and add to the pot. Stir well. Add chicken broth and stir again. Cover and let simmer until potatoes are almost tender. This should take about 15-20 minutes. Add corn. Cover and let cook until the corn is done. About 10 minutes. I served mine with cornbread. Enjoy!”

“My husband’s grandmother lived in Loris, SC and they have Bogg festivals like we have chili cook-offs. 1lb Conecuh sausage, 4-Chicken Breast, 2 cups cooked rice with a tsp of Tony Chachere’s seasoning. Our variation is grilled or sautéed (depending on if it’s raining outside!) Conecuh & Chicken(sprinkled with Kickin’ Chicken Seasoning). Slice the Conecuh into rounds, chop the chicken, and stir the meat and drippings (from resting when you cut it) into the cooked rice.”
